Hi, friends! I’m back today with a recipe that I’ve been wanting to share for a long time. It’s seasonal, very “fall,” healthy, full of flavor and it’s an oldie but a goodie. If you’ve been following me for a while here, you may remember that years ago I wrote a book called, “Get a Real Food Life.” It was published by Rodale and focuses on regaining control over your relationship with food….my tips for being able to enjoy all the food you eat, secure in knowing that it’s nourishing your mind, body and soul. If you haven’t read it you, I encourage you to. Not just because I wrote it 😊….but because everything I included back then still remains true today!

All that to say that the recipe I’m sharing today is one that stemmed from that book! I’ve adapted it a little over the years (just to make it better and even healthier) but basically, it’s the same amazing recipe featured in my book. My Apple Berry crisp is the perfect dessert (or breakfast!) for this time of year and I hope you’ll make it ASAP for your family!

As you already know, I am obsessed with the farm fresh apples in the Fall. I buy them weekly at my farmers’ market! The frozen mixed berries in this recipe, I get at Trader Joes; easy, cheap and fresh.  These two ingredients combined are incredible and surprise….no sugar is needed when you pair together this winning combo.

I really started eating (and then craving) Apple Berry Crips all because of my husband Jonathan.  He loved it as a kid and always encouraged me to cook up some of my own. This recipe was inspired by him; and of course, he was always happy to be the taste tester.

My Apple Berry Crisp so fast and simple to make yet the flavor is outstanding!  It looks impressive and tastes like it took all day to make when in reality I promise it only takes 20 minutes.

I now make it especially tasty by using Oat Flour and Quaker Quick oats – Quick 1 Minute oats (NOT instant) oatmeal.  Quick oats is oatmeal but has been shaved down to make the oats thinner and therefore quicker to cook.  More delicious and quicker to make; win, win!

Wait until you taste the topping on this dish; it’s mind blowing. I really have to hold off picking at the crispy, “moreish”, deliciousness! An added bonus is that my family and my clients really love that it’s also completely Gluten Free.

My Apple Berry Crisp is high in fiber thanks to the apples, oatmeal, oat flour, and berries – it’s simply a JOY to make and to EAT!  Ellis and I eat it for breakfast (it’s great with yogurt) and Jonathan loves it for dessert with ice cream of course!

Janine’s Tried and True Apple Berry Crisp

Preheat oven 375 degrees

Ingredients:

5 medium apples – peeled and sliced thin

1 Tablespoon corn starch

2 cups or (1 pound) frozen mixed berries – I like Trader Joes Frozen Very Cherry Blend

1 Tablespoon Maple syrup

Topping:

1 1/2 cups Quick Oats (Not instant) I use Quaker Oats Quick 1 minute Oats

1 Cup Oat flour

1/2 cup light brown sugar

4 oz. unsalted butter (melted)

1 teaspoon Vanilla

1 teaspoon Cinnamon

Instructions:

Peel the apples and slice thin.

In a large bowl add the apples, cornstarch, mixed berries and maple syrup – mix well.

Place the apple berry mixture in the 9×9 pan lined on the bottom with parchment paper or butter.

In another large bowl add the quick oats, oat flour, light brown sugar and cinnamon – mix well.  Set aside.

Melt the butter in the microwave and add it to the oat mixture along with the vanilla.

Mix until moist and crumbly.

Sprinkle the topping all over the fruit.

Bake for 45 minutes at 375 degrees or until the filling is bubbly and the topping is golden brown.
