Hi, Friends! Thank you so much for all the amazing, positive feedback you have sent my way regarding the recipes I have been sharing lately. Cooking comfort food with local, seasonal ingredients has been a huge hit in this space recently so I’m back today to give you more of what you love!

I have a feeling that this may become one of your favorite favorite recipes I’ve ever shared. It is full of flavor, nutritious, easy to make and super easy to clean up, low carb and your family and/or guests will think you’re super fancy when they see it plated. Its pretty and it just screams fall and comfort.

My Seasonal, Savory, Sheet Pan Roasted Chicken with Tahini, Apples and Onions is a one pan wonder. Simply throw it all in, mix it up and roast it all in the same pan and wala (!), dinner is served! I have even purchased several disposal sheet pans on amazon lately to keep clean up time to five minutes or less. It really helps on busy weeknights to be able to prep, prepare and clean up a healthy meal for my family in no time!

Jonathan and I started cooking this dish together when we lived in London 30 years ago. For me it was always so comforting and warm, it always reminded me of home. It’s so good we continue to make it today.

The combination of flavors in this recipe makes this dish truly unique and special. The apples and onions give the chicken a sweet and very savory edge and the tahini gives it such  depth.

For those of you that don’t know, tahini is ground up sesame seeds that is made into a paste; its flavor is light and nutty. It’s widely known as an ingredient in hummus however it is used in many dishes around the world, particularly in Mediterranean and Asian cuisine. Tahini is also a tasty way to add powerful antioxidants and healthy fats to your diet, as well as several vitamins and minerals! I love the Trader Joes tahini in a jar but you can use whatever brand you like; its easily found in most supermarkets.

Janine’s Seasonal, Savory, Sheet Pan Roasted Chicken with Tahini, Apples and Onions





Preheat the oven to 350 degrees


8 chicken thighs (approx. 3 pounds)  I use free range


4 Tablespoons Tahini – mix the tahini well as the oil separates


1 1/2 lemons – juiced


2 medium apples – chopped into 1/4 inch pieces


1 medium onion – chopped into 1/4 inch pieces


1/2 teaspoon Cumin


2 Tablespoons honey


2 Teaspoons Dijon Mustard


1 Tablespoon coconut aminos


2 Tablespoons warm water




Place chicken thighs on a sheet pan (skin side down) lined with foil (crimp up the side so the juices will not flow up) OR use a silver foil sheet pan like I did in the pictures.


In a large bowl add the  tahini, lemon, cumin, honey, Dijon mustard, coconut aminos and the warm water.  Whisk well until everything is combined.  Set aside.


Peel the apples and chop into 1/4 inch pieces.  Do the same of the onion.


Add the Tahini mixture to the chicken along with with apples and onions.  Mix well.


Make sure the chicken is skin side down (half way through cooking you will turn it over and it will create a really beautiful browned chicken).


Bake or roast the chicken for 45 minutes – take it out of the oven and turn it skin side up.


Bake or roast for another 35–45 minutes or until the top of the chicken is golden brown.


Serve the savory/sweet chicken on a bed of the apple and onion mixture.
