Hi Friends! Today I’m sharing a recipe that I make all the time. I seriously think it’s on a weekly rotation in our house because it is so tasty but is so quick and simple to make! My Orange Cumin Roasted Chicken is easy enough to make for a weeknight but looks elegant enough to make and serve at a dinner party.

Even my kids ask for this all the time and because it doesn’t take much effort, and always comes out juicy and delicious, I’m happy to oblige. I promise you can’t screw this up. It’s healthy, simple, ever so tasty and made in a snap!

Fast and Flavorful: Janine’s Orange Cumin Roasted Chicken


3 Lbs organic or free range chicken thighs and legs

1 cup orange juice

2 Tablespoons orange marmalade

1 teaspoon garlic powder

1 teaspoon cumin

Pepper to taste

1 tablespoon coconut aminos


Place the chicken in a baking pan skin side down. I use a disposable one as it gets sticky, approx 9 x 12 in size. Makes for easy clean up!

In a medium bowl, mix well all the other ingredients, orange juice, marmalade, garlic powder, cumin, pepper, coconut aminos.

Pour the wet mixture over the chicken and let marinate for 20-30 minutes or over night if you want. If you do not have time to marinate it will still be delish!

Roast the chicken on 375 (skin side down for 30 minutes) – take out of the oven and flip over – the skin side facing up.

Roast for another 30-40 minutes or until chicken skin is dark brown.  Depending on your oven it may need another 10-20 minutes to roast.
