Hi, Friends! My direct messages have been blowing up (as the kids would say) regarding recipes I have been creating in my kitchen! I’ve been trying to share as much as I can over on my Insta Stories (@janine.whiteson). You seem to be loving that and are requesting all the things! Today is all about the most requested recipes of the week.

Today’s post can bring you from morning to night. I’m sharing my recipe for muffins that your whole family will love for breakfast or dessert and my famous Asian chicken meatballs which can serve as lunch, dinner or even a delicious appetizer to bring to a party!

Both of these recipes are healthy (of course), low in salt, FULL of flavor, easy (and cheap) to make, and are fast. I have to reiterate here that almost nothing makes me happier than hearing that you’re making my recipes in your home. Janine’s Best Ever Banana Chocolate Chip Muffins

Recipe makes 12 muffins.

Pre-heat your oven to 350 degrees.

Ingredients:

1 cup spelt flour

2 teaspoons baking powder

1 cup oat flour

1/2  teaspoon cinnamon

1 organic egg

1/2 cup oat milk

1 cup mashed bananas – frozen mashed bananas are great too

1/4 cup Olive oil or Canola oil

1/2  cup dark brown sugar

1 teaspoon Vanilla

6 oz. semi-sweet chocolate chips

 

 

 

 

 

 

 

Instructions: 

1: Pre-heat your oven to 350 degrees F.  Coat a 12-cup nonstick muffin pan with cooking spray or line with paper baking cups.

2: In a medium bowl, combine the spelt flour, oat flour, cinnamon and baking powder.  Mix well. Set aside.

3: In another medium bowl combine the egg, oat milk, bananas, oil, brown sugar and vanilla. Mix well.

4: Add the wet ingredients to the dry ingredients – mix well but do not over mix.

5: Add the chocolate chips.

6: Place batter into the 12 muffin cups – bake for 20 minutes or until muffins turn light brown on top.

7: Let cool and enjoy!

 

 

 

 

 

 

 

 

Simple and Fast: Asian Chicken Meatballs

 

Ingredients:

1 pound ground chicken breast

1 organic egg

1/4 teaspoon toasted sesame oil

3 scallions – minced

1 teaspoon garlic – minced

2 tablespoons ginger – minced

1/4 teaspoon honey

1/8 teaspoon Chinese five spice (optional)

2 tablespoons panko crumbs

2 tablespoons coconut aminos (this is a soy sauce replacement)

Trader Joes Sweet Chili Sauce (use for dipping)

 

 

 

 

 

 

 

 

 

Instructions:

1: Preheat oven to 475 degrees F.

2: Line a large baking sheet with parchment paper.

3: In a large bowl – beat the egg then add in all the ingredients – mix well.

4: With wet hands (makes it less sticky) make 20 small meatballs – place on lined baking sheet.

5: Put the meatballs in the oven for about 10-12 minutes and roast until cooked.  This will go fast due to cooking on such a high heat.

6: Use Trader Joes Sweet chili sauce for dipping or place meatballs in lettuce cups and drizzle chili sauce on top!

7. Enjoy!
