Happy Monday, friends! Today, I’m sharing a healthy, delicious recipe that I hope will become a staple in your home. My family loves these muffins so much that I actually made two whole batches this past weekend alone.

I think the reason that we all love them so much is that they provide amazing health benefits but also totally satisfy our sweet tooth. My husband Jonathan is a huge fan of anything that resembles cake or muffins and these are a much healthier alternative. They are made with Spelt Flour which means they are full of fiber so they keep us fuller longer and keep everything regular. And, they are a great source of healthy fat. I have lots to say about “good fat” and the importance of fat in your diet but I’m saving that for next weeks blog post.

Janine’s Greek Walnut Spice Muffins



1 cup Walnuts – chopped (divided up into 3/4 for batter and 1/4 cup for topping muffins)

1 ½ cups Spelt Flour

2 tablespoons Almond Flour

2 teaspoons Baking Powder

½ teaspoon Baking soda

1 teaspoon Ground Cloves

2 ½ teaspoons Cinnamon

6 large dates chopped fine

2 large eggs

1/3 cup Maple syrup

1 cup Greek Nonfat Yogurt

1/3 cup Olive Oil

1/2 cup Orange Juice


Mix all dry ingredients in a large bowl (not the dates) – set aside.

In another large bowl whisk together all wet ingredients – including the dates.

Add the wet ingredients to the dry ingredients and mix gently until batter is all combined.

Evenly divide the batter into a non-stick (sprayed with cooking oil) muffin pan. This should make 12 muffins.  Top each muffin with the 1/4 left over chopped nuts.

Bake for 25 minutes on 325 degrees.
